  2. Toor dal (Split pigeon peas) – 2 tablespoons
  3. Chana dal (Split chickpeas) – 2 tablespoons
  4. Urad dal (Split black gram) – 2 tablespoons
  5. Dried red chilies – 6-8 (adjust for spice level)
  6. Cumin seeds – 1 teaspoon
  7. Garlic cloves – 2-3 (optional, for depth of flavor)
  8. Salt – to taste
  9. Asafoetida (Hing) – a pinch (for an umami boost)
  10. Oil – 1 teaspoon (for roasting the leaves)
