Bitter gourd (kakarakaya) – 2 medium-sized, washed and sliced thin
Tamarind – lemon-sized ball (soaked in warm water and pulp extracted)
Dried red chilies – 8-10 (adjust for spice level)
Fenugreek seeds – 1/2 teaspoon
Mustard seeds – 1/2 teaspoon
Cumin seeds – 1 teaspoon
Garlic cloves – 3-4 (optional, for added depth)
Turmeric powder – 1/2 teaspoon
Salt – to taste
Asafoetida (Hing) – a pinch
